If you are tired of the same old boring side salad this recipe is for you. Celebrate the arrival of summer peaches with this flavorful salad that will be the star of any meal. It pairs perfectly with a simple protein such as grilled chicken or fish.

 

Ingredients:

2 firm ripe peaches cut into 6 sections

1 cup cherry or grape tomatoes, halved

¼ cup thin sliced red onion

1/2 cup crumbled feta cheese

4 cups arugula or spinach or a combination of both

¼ cup chopped pistachios, or pecans or walnuts

2 tablespoons olive oil

 

Dressing:

1 medium ripe peach

¼ cup olive oil

¼ cup white balsamic vinegar

1 teaspoon maple syrup

½ teaspoon Dijon mustard

Salt and pepper to taste

 

Steps:

  1. Heat grill to medium high heat. Brush the peach sections with olive oil and grill for 2-3 minutes on each side.
  2. In a food processor or blender, add the ingredients for the dressing and blend until smooth.
  3. To a large plate or bowl add the arugula, tomatoes and red onion and toss with enough dressing to coat. Place sliced peaches over the salad, sprinkle with the feta and nuts.
